Wild In The Kitchen: Spicy Grilled Catfish Soft Tacos

Mike Bolton | August 2, 2018

1 pound catfish filets
1 package tortillas
1/4 cup olive oil
2 tablespoons white vinegar
2 tablespoons lime juice
1 1/2 teaspoons honey
2 cloves garlic, minced
1/2 teaspoon chili powder
1 teaspoon Old Bay seasoning
1/2 teaspoon pepper
1 teaspoon Tabasco sauce
3 tomatoes diced
1 small head of cabbage
Waffle House Chipotle Sauce
Sour cream

In a bowl, make marinade by combing olive oil, vinegar, lime juice, honey, garlic, chili powder, Old Bay seasoning, pepper and Tabasco sauce. Place the catfish filets into the bowl, cover and refrigerate six hours. Lightly grease the grill top, and get the grill hot. Remove catfish from marinade and grill until it easily flakes with a fork, turning just once. Assemble tacos by placing flaked catfish in the center of tortillas. Add sour cream tomatoes, cabbage and Waffle House Chipotle Sauce (they’ll sell you a bottle). Serve by rolling up tortillas (not taco shells) around fillings.
