Braised Doves

8 dove breasts
Flour
Cornmeal
Vegetable oil
Water
Salt and pepper, to taste

Salt and pepper dove breasts, and powder each with flour and corn meal. Brown breasts in oil. Remove breasts and drain on paper towel. Pour oil out of skillet. Add 1/4 inch of water to the skillet, put dove breasts back in the pan, cover and simmer for 30 minutes over low heat until the dove breasts become tender. This simple dish makes its own gravy and is served best with biscuits and wild rice.
