Wild Game Recipes: Dove-Stuffed Peppers

You just got back from the dove field, you got your birds dressed, and you want a little something to eat while you watch the Dawgs or Jackets play? Check out this easy recipe for cooking your favorite gamebird.

You’ll need:
breasted doves (or quail, snipe, or woodcock)
red or green bell peppers
salt
pepper
chopped Vidalia onion
bacon

Fire up the grill so it can preheat. Cut the top off a pepper and use a spoon to dig out the seeds. Put a dove breast into each lobe of the pepper along with chopped Vidalia onion. Place bacon over the top of the pepper and wrap in aluminum foil. Cook over medium heat for 30 minutes, or until done. You can also cook it in the oven at 350 degrees for 40 minutes.
