Wild Game Recipes: Cilantro Catfish

Catfish for dinner are sort of utilitarian. You fry them up, serve them with hush puppies and cole slaw and you’ve had your standard-issue fish fry. This recipe elevates fried catfish to gourmet status — and it’s easy!

What you’ll need:
First, you’ll need to go catfishing. And not for those “just right eating-size” 12-inch jobs. For this recipe a 2- or 4-lb. channel cat or blue is fine; a flathead may be better. Fillet the fish.
Aside from four catfish fillets, you’ll also need:
1/4-cup flour
1/4-cup corn meal
1/4-tsp salt
3/4-tsp chili powder
1/4-tsp dry mustard
1/4-tsp ground cumin
1 tbsp chopped, fresh cilantro

Mix all the ingredients. Dip the fillets in milk, then dredge in the mixture and pan fry in canola oil until they are golden brown. The cilantro will make these the tastiest catfish fillets you ever ate!
