This recipe can be easily modified to fit the number of people you’re going to feed. You can adjust to suit the needs of your group and their appetites.
1 lb. venison sausage
1 dozen eggs
1 medium onion, diced
1 medium bell pepper, diced
salt & pepper (or other seasoning according to your taste)
Brown the sausage in a skillet and add onion and bell pepper. Cook until onion is clear. Break eggs and scramble, then pour into sausage/onion/pepper mixture. Cook until set. In the meantime, heat a dutch oven (with legs) with about eight or nine charcoal briquettes underneath and 12 or so on top. Wrap tortillas in foil and place in the hot oven. When tortillas are warm, assemble to suit you and enjoy!
