Wild Game Recipes: Blackened Fish Fillets

The next time you are in the mood for fish, and you want to forego the hassle of frying tons of it, try this recipe.

You’ll need:
2 fish fillets (whatever you want)
1 lemon
extra virgin olive oil
salt
black pepper
cayenne pepper

Preheat the oven to 400 degrees. Place fillets on a plate and set aside. In an iron skillet, put enough olive oil to coat the pan, and set on a stove eye on high. Let the oil preheat for at least 10 minutes.
Cut the lemon into wedges, and squeeze the juice from one wedge on a side of each fillet. Season with salt, pepper, and cayenne pepper to suit your taste and place into the hot skillet.
Cook on one side for a minute, flip each fillet, squeeze on juice from the remaining lemon wedges and season. Let cook for one more minute, and then place the skillet into the preheated oven. Cook at 400 degrees for an additional five to seven minutes, or until filets are white and flaky.
Serve with a pot of cheese grits and a big glass of sweet tea and enjoy.
